Cow’s Milk can produce two types of protein, A1 and A2. A1 protein is a mutation of the A2 protein that occurred as a result of a genetic mutation in a group of cows thousands of years ago. A growing body of research shows that as many as 1 in 4 Americans show some level of lactose intolerance. Research suggests that for many Americans, it may be due to an inability to digest A1 protein, not lactose.      

Fortunately, sheep never developed the A1 protein mutation, and as such, only produce milk with A2 protein.
